A brewery on Rokko Island that brews everything by hand using Kobe's own Nunobiki water, and since 2018 has worked with local organic farmers to grow the barley and hops themselves under what they call the KOBE LOCAL BEER PROJECT.
That sourcing is the whole story here, more than any one specific beer. They moved out from Ninomiya shopping street in October 2021.
